The vinaigrette dressing ingredients
- Olive oil
- white wine vinegar
- lemon (if you like)
Mix all the ingredients together and shake the mixture a tin or whisk it thoroughly.
Season the chicken and place in the oven for 25 minutes to cook under 180dc. (I used vegetable mixed spices on the chicken and garlic).
The chicken is well done after 25 minutes. Slice it and let it cool as you prepare the salad.
The salad ingredients
- Feta cheese
- An avocado (I also like to add endives (also known as chicory because I like the bitter taste).
Start with the lettuce, add the vinaigrette dressing, bacon, feta, tomatoes, the chicken and lastly the avocado.
Season to taste.
Serve with bread (optional but the bread will help eat the “juice” at the bottom of the salad bowl).
The remaining vinaigrette dressing on the side can be used by those who like more dressing on their salad.
Be sure to taste the dressing to make sure you have the right taste of every ingredient.
