BROCCOLI SOUP RECIPE
Broccoli soup recipe (with goat cheese and croutons) by Achieng Otieno of Jikoni Delights
Ingredients
- Broccoli
- Onions
- Butter
- Vegetable or chicken stock
- Milk
Method
Fry the onions with butter, add the broken broccoli and cook until soft/tender.
Add vegetable/chicken stock (you can use knoor cubes -just add hot water) You’ll need it for taste. Add milk and let it simmer for about 10 minutes.
Blend the cooked vegetables. Put the blended vegetables back in the bowl for seasoning.
You can choose to sieve the soup or have it with the broccoli chunks.
Serve with croutons if you like and add the goat cheese as preferred.
I used goat cheese as it is a strong cheese to balance the broccoli taste.
