TOSSED BABY POTATOES WITH MEATBALLS
Tossed baby potatoes with meatballs and mint yogurt sauce recipe by Achieng Otieno of Jikoni delights

Method
Beat the potatoes so they are slightly “cracked”. -(You can use a kitchen mallet).
Wash the potatoes and dry them (do not peel)
Heat oil in pot and add the potatoes. Cover.
As they are frying, shake them occasionally (where you lift the cooking pot off the stove and shake) until they are cooked.
Add red wine and crushed coriander seeds to the potatoes and simmer for 15 minutes.
Meanwhile work on your meatballs and cook them in a separate pan. (Remember you can serve the potatoes with something else if meatballs are not your preference).
Season the potatoes and serve as desired with a sauce of your choice.
I used mint yogurt sauce (Plain yogurt with mint and salt).
Yum?and warm?.
NB: Wine evaporates while cooking so whatever is left behind is perfectly safe for kids. (No alcohol).
